Description
Arbutus honey has a peculiar bittersweet taste and crystallizes quickly. It contains the substance Arbutin which cleans the blood and regulates the level of cholesterol in it. It contains natural antibiotic substances in a higher percentage than other honeys, as a result of which it is a protective shield for the body against various diseases.
It contains the polysaccharide, tyranose which has been experimentally proven to increase cell life. It contains the enzyme diastase or amylase, which breaks down starch.
Globally it is called as centenary honey because it is rarely produced “almost every 100 years” on the French island of Corsica and is exclusively exported to rich Arab countries.
In Greece we produce it almost every year in the Peloponnese and Halkidiki and it is a particularly stimulating food for humans and bees. According to the Institut fur Honig – Analytik in Bremen and Kraft in Munich it contains:
– 0.0% sucrose (common sugar)
– 36.1% fructose
– 28.9 glucose
– 1.7% maltose
– 1% tyranose
– 19.5% moisture
– ph 4.5
Especially since it has a low sugar content, it is also good for diabetics.
